Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Peanut Butter Mousse

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream

Ganache

  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream (for ganache)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar if needed for sweetness

Preparation

  • In a bowl, mix the graham cracker crumbs with the melted butter until well combined. Press this mixture into the bottom of a 9x13 inch pan to form the crust.
  • In another bowl, beat together the peanut butter and powdered sugar until smooth.
  • In a separate bowl, whip 1 cup of heavy whipping cream until soft peaks form. Fold the whipped cream into the peanut butter mixture until fully incorporated.
  • Spread the peanut butter mousse evenly over the graham cracker crust.
  • For the ganache, heat 1 cup of heavy cream until just boiling. Pour it over the chocolate chips and let sit for 5 minutes, then stir until smooth.
  • Pour the ganache over the peanut butter layer and spread evenly.
  • Refrigerate for at least 4 hours or until set.
  • Slice and serve, enjoying the rich layers of flavors.
