Ingredients
  

Base Ingredients

  • 1/3 cup coconut oil Melted
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup crunchy or creamy peanut butter
  • 1/4 cup pure maple syrup (or honey) For a vegan option, use maple syrup.

Additional Ingredients

  • 1 and 1/4 cups old-fashioned whole rolled oats
  • 3/4 cup crispy rice cereal
  • 3/4 cup add-ins (such as salted or unsalted peanuts and raisins) Feel free to choose your favorite mix-ins.
  • 1 Tablespoon unsweetened shredded coconut Optional, for topping.

Instructions
 

Preparation

  • Line the bottom and sides of a 9-inch square baking pan with parchment paper, leaving an overhang on the sides.
  • In a medium pan over medium heat, melt the coconut oil and chocolate chips together, stirring often. Once melted, stir in the peanut butter and maple syrup until well combined. Remove from heat.
  • In a medium bowl, whisk together the oats, crispy rice cereal, and add-ins of your choice.
  • Pour the chocolate mixture over the oat mixture and stir to combine. The mixture will be wet.
  • Transfer the mixture to the prepared pan and use the back of a flat spatula to press it firmly into the pan to ensure it holds its shape.
  • If desired, sprinkle the shredded coconut on top.
  • Refrigerate uncovered for at least 2 hours or up to 2 days. If refrigerating longer than 2 hours, cover lightly.

Serving

  • When ready to serve, lift the parchment paper out of the pan and cut into squares.

Notes

To maintain freshness, store in an airtight container in the refrigerator for up to 2 weeks. To freeze, wrap well to prevent freezer burn. These bars can be enjoyed as a snack or dessert and pair well with a glass of milk.
