No Bake Banana Caramel Pecan Pie

Crust Ingredients
- 1 package shortbread cookies (about 2 cups crushed cookies)
- ¼ cup Fisher Nuts Pecans
- 2 tablespoons granulated sugar
- 6 tablespoons unsalted butter, melted
Caramel Layer Ingredients
- 11 ounces unwrapped soft caramels
- 2 tablespoons heavy cream
Banana Pecan Layer Ingredients
- 1 cup milk
- 1 box instant banana pudding (3.4 ounces)
- 4 ounces softened cream cheese
- ½ cup sweetened condensed milk
- 1 banana diced
- ½ cup chopped Fisher Nuts Pecans
- Chopped pecans for garnish
Instructions
Preparation of Crust
- In a mixing bowl, combine crushed shortbread cookies, chopped pecans, granulated sugar, and melted butter. Mix well until fully combined.
- Press the mixture firmly into the bottom and up the sides of a pie dish to form the crust.
- Place the crust in the refrigerator to chill.
Caramel Preparation
- In a small saucepan, add the unwrapped soft caramels and heavy cream.
- Heat over low heat, stirring frequently, until smooth and fully melted.
- Pour the caramel over the chilled crust and spread it evenly.
- Return the pie to the refrigerator.
Banana Pecan Layer Preparation
- In another bowl, whisk together the milk, instant banana pudding, softened cream cheese, and sweetened condensed milk until smooth.
- Fold in the diced banana and chopped pecans.
- Pour this mixture over the caramel layer in the pie crust and spread it evenly.
Chill
- Cover the pie with plastic wrap and refrigerate for at least 4 hours or until it sets completely.
Serving
- Slice the pie into wedges and serve on individual plates.
- Garnish with additional chopped pecans and a drizzle of caramel sauce if desired.
