Ingredients

Main Ingredients

  • 1 cup mashed ripe banana Measured after mashing
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream Can substitute with yogurt for more moisture.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Gluten-free flour can be used as a substitute.
  • 1/2 cup chopped nuts (optional) Add if desired.

Instructions

  • Set the oven at 350°F and grease a 9×5-inch metal loaf tin. Measure one cup of mashed banana.
  • Combine the cooled melted butter with banana, sour cream, sugar, eggs, and vanilla.
  • Blend salt and baking soda into the flour. Fold this dry blend into the wet bowl briefly, adding optional walnuts last.
  • Transfer batter to the prepared tin. Bake approximately 60–70 minutes, extending until a central skewer shows crumbs without liquid batter.
  • Rest in the tin 15 minutes, then unmold and cool on a rack at least 45 minutes before slicing.

Notes

Control fruit quantity by measuring the mash. Use a metal loaf pan and verify the deepest center is baked before cooling. Optional nuts may be omitted.
