Ingredients
  

For the Cobbler

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 dash salt
  • ¾ cup milk
  • ½ cup unsalted butter (melted)
  • 1 15-ounce can peaches (diced) You can use fresh peaches as an alternative.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C).
  • Put 1 teaspoon of melted butter into each regular-size muffin tin.
  • In a large bowl, use a wooden spoon to stir together the sugar, flour, baking powder, salt, and milk until well mixed.

Baking

  • Spoon 2 tablespoons of batter into each muffin tin.
  • Add 1 tablespoon of diced peaches on top of the batter in each tin.
  • Sprinkle a little brown sugar and cinnamon on top of each filled muffin tin.
  • Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean.
  • Let them cool almost completely before taking them out of the pan. Use a butter knife to loosen the edges, then lift them out.

Notes

Serve warm, topped with vanilla ice cream or whipped cream for extra indulgence. Store in an airtight container at room temperature for up to three days. Refrigerate for up to a week or freeze in a freezer-safe container for up to three months.
