Ingredients
  

Main Ingredients

  • 2 cans skipjack tuna Use high-quality tuna for the best taste.
  • 1/2 medium bell pepper, diced
  • 1/2 small red onion, chopped
  • 1/2 cup cucumber, chopped
  • 1 large roasted red pepper, chopped
  • 2 tbsp capers, chopped
  • 2 tbsp fresh flat leaf parsley, chopped

Lemon Herb Dressing

  • 1 large lemon, juiced
  • 2 tbsp dijon mustard
  • 3 tbsp olive oil
  • 1 tsp herbs de Provence (or Italian seasoning)
  • 1 tsp garlic powder
  • 1/2 tsp sea salt Adjust to taste.

Preparation

  • In a large bowl, combine the tuna with the chopped bell pepper, red onion, cucumber, roasted red pepper, capers, and parsley.
  • In a separate bowl, mix the lemon juice, dijon mustard, olive oil, herbs de Provence, garlic powder, and sea salt to create the Lemon Herb Dressing.
  • Pour the dressing over the tuna and vegetable mixture. Stir gently until everything is well coated.

Notes

For serving, enjoy the salad on a bed of greens, in a pita pocket, or with crispy crackers. You can also top it with fresh parsley or feta cheese. Store leftovers in an airtight container for up to 3 days for optimal freshness.
