  • 1 tsp sea salt
  • 1 tsp granulated cane sugar
  • 2 tsp lemon juice Juice from 1/2 small lemon
  • 2 Tbsp white distilled vinegar
  • 1 1/4 cup sunflower oil

Preparation

  • Place the whole egg, mustard, sea salt, sugar, lemon juice, and vinegar into a tall jar or a blender.
  • Using an immersion blender or regular blender, blend these ingredients together until smooth.
  • Slowly pour in the sunflower oil while blending at the same time, starting with a thin stream to help the mixture emulsify.
  • Continue blending until the mayonnaise thickens and reaches your desired consistency.
  • Taste the mayonnaise and adjust the seasoning if needed, adding more salt, lemon juice, or sugar to taste.

Notes

Store your homemade mayonnaise in an airtight container in the refrigerator; it lasts about one week. Use fresh ingredients for best flavor and ensure they're at room temperature before starting. If the mayonnaise doesn't thicken, try adding another egg yolk and blend again.
