Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper or aluminum foil, and spray with nonstick cooking spray.
  • Place the sweet potatoes on the baking sheet and poke holes in the tops with a fork.

Baking

  • Bake the sweet potatoes for 60 minutes, rotating the pan halfway through to ensure even baking.
  • Test the potatoes with a fork to check that they are fully cooked and tender. Allow them to cool slightly for 5-10 minutes.

Mashing

  • Carefully remove the skin from the potatoes; it should peel off easily.
  • Roughly chop the peeled potatoes and place them in a large mixing bowl.
  • Add the unsalted butter and maple syrup to the bowl.
  • Mash the potatoes with a masher while gradually adding the milk until you reach your desired texture and creaminess.
  • Add salt to taste.

Serving

  • Drizzle with additional maple syrup if desired, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or stovetop, adding a splash of milk if too thick. Experiment with spices like cinnamon or nutmeg for added flavor.
