  • 3 pounds sweet potatoes
  • 2 tablespoons unsalted butter
  • 1/4 cup real maple syrup additional for topping
  • 1/4 cup milk
  • Salt to taste

Preparation

  • Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper or aluminum foil, and spray it with nonstick cooking spray.
  • Lay the sweet potatoes on the baking sheet and poke holes in the tops of them with a fork.
  • Bake for 60 minutes, rotating the pan halfway through for even baking. Test the potatoes with a fork to ensure they are fully cooked and tender.

Mashing

  • Allow the potatoes to cool slightly for 5-10 minutes.
  • Carefully remove the skin from the potatoes; it should peel off easily. Roughly chop the peeled potatoes and place them in a large mixing bowl.
  • Add the unsalted butter and real maple syrup. Use a masher to mash the potatoes while gradually adding milk until you reach your desired texture and creaminess.
  • Add salt to taste.
  • Drizzle with additional maple syrup if desired and serve warm.

Notes

Mashed sweet potatoes can be served with chicken, pork, or beef, and pair well with vegetarian meals. For garnish, sprinkle chopped nuts or herbs on top. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
