Ingredients
  

Potato Base

  • 4 lb potatoes (peeled and cubed) Use starchy potatoes like Russets or Yukon Golds for better texture.

Creamy Mixture

  • ½ cup sour cream
  • ¾ cup milk
  • 3 tablespoons butter
  • to taste Salt
  • to taste Pepper

Toppings

  • cups shredded sharp cheddar cheese (divided) 2 cups for mixing, ½ cup for topping.
  • ½ cup grated Parmesan cheese
  • 6 strips bacon (cooked and crumbled)
  • 3 green onions (sliced) Can be replaced with chives.

Instructions
 

Preparation

  • Boil the cubed potatoes until soft, about 15 minutes.
  • Preheat the oven to 350°F.
  • Add the sour cream, butter, milk, salt, and pepper to the hot potatoes. Mash them with a potato masher or a hand-held mixer.
  • Mix in the Parmesan cheese and 2 cups of shredded cheddar.

Baking

  • Place the mashed potatoes in a baking dish.
  • Top with the remaining ½ cup shredded cheddar, crumbled bacon, and sliced green onion.
  • Bake for 30 minutes or until the cheese is melted.

Notes

Serve hot from the oven. Garnish with extra bacon and green onions if desired. Store leftovers in an airtight container for up to 3 days in the fridge.
