  • 1.5 cups granulated sugar
  • 1 large egg
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest

  • 0.5 cup powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C).
  • Whisk together flour, baking soda, and salt in a medium bowl.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add the egg, lemon juice, and lemon zest, mixing until well combined.
  • Gradually mix in the dry ingredients until just combined.
  • Cover the dough with plastic wrap and chill for at least 30 minutes.

Baking

  • Scoop tablespoon-sized amounts of dough and roll them into balls.
  • Roll each ball in powdered sugar before placing it on a lined baking sheet.
  • Bake for 10-12 minutes, until the edges are golden and the centers are soft.
  • Allow the cookies to cool on the baking sheet for a few minutes.
  • Transfer the cookies to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. For a special touch, add a drizzle of lemon glaze or serve with fresh fruit. Use room-temperature butter for the best texture and do not skip the chilling step.
