Main Ingredients
- 6 cups crisp rice cereal
- 3 tablespoons unsalted butter
- 3 cups mini marshmallows 1 1/2 cups lemon-flavored and 1 1/2 cups plain, or all plain
- 1 lemon zest only
- 1/2 teaspoon lemon extract optional
- 1/2 cup white chocolate chips or melting wafers
- lemon peel or zest optional, for garnish
Method
Line a 9×9-inch pan with parchment paper, leaving an overhang.
Melt the 3 tablespoons butter in a large saucepan over low heat. Add all 3 cups marshmallows and stir for about 3–5 minutes until smooth.
Stir in the zest of 1 lemon and the optional 1/2 teaspoon extract; remove from heat. Fold in all 6 cups cereal until evenly coated.
Transfer to the prepared pan and spread evenly with parchment paper, pressing lightly into the corners.
Microwave the 1/2 cup white chocolate in 20-second intervals, stirring until smooth; drizzle over the bars and add optional garnish. Cool at least 30 minutes until set, then cut into 12 squares.
- Keep airtight at cool room temperature for 2–3 days for best texture.
- Freeze wrapped bars for up to a month; thaw while wrapped.
