Main Ingredients
- 4 boneless, skinless chicken breasts flattened to about 3/4 inch thick
- 1/4 cup lemon juice freshly squeezed
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil for the marinade
- Salt and pepper to taste
- fresh parsley chopped, optional garnish
As Needed
- neutral oil as needed for the grill grate
Marinate
Flatten chicken breasts to about 3/4 inch thick. Whisk lemon juice, honey, Dijon, 2 tablespoons olive oil, salt, and pepper until blended.
Coat chicken with the marinade and refrigerate for at least 30 minutes, up to 2 hours, turning once.
Grill
Heat a clean, lightly oiled grill to medium-high. Drain chicken, discard used marinade, and grill for about 6–7 minutes per side until the thickest part reaches 165°F, moving to a cooler area if browning too quickly.
Rest on a clean plate for 5 minutes, then slice and garnish with optional parsley. Serve 1 breast per portion.
- Refrigerate cooked chicken promptly at 40°F or below for up to 3 days.
- Freeze cooked portions for up to 2 months; thaw in the refrigerator.
- Reheat leftovers to 165°F.
