  • 1 pound 90% lean ground beef Use good quality for better flavor.
  • 3 cloves minced garlic
  • 1 tablespoon olive oil
  • 1 cup diced red bell pepper
  • 1 cup sliced zucchini
  • ½ cup sugar snap peas
  • ½ cup shredded carrots
  • 8 ounces sliced mushrooms
  • ½ cup packed light brown sugar
  • ½ cup reduced-sodium soy sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon crushed red pepper flakes Adjust based on spice preference.
  • ½ teaspoon pepper
  • 2 cups cooked white rice Can use brown rice as an alternative.

Instructions
 

Preparation

  • In a large skillet over medium-high heat, cook the ground beef and minced garlic for 2-3 minutes until no longer pink. Remove from skillet and set aside.
  • Drain the grease from the skillet and add the olive oil.
  • Add the diced red bell pepper, sliced zucchini, sugar snap peas, shredded carrots, and sliced mushrooms. Sauté for 2-3 minutes until tender.

Cooking

  • Return the cooked ground beef to the skillet with the vegetables.
  • In a small bowl, whisk together the brown sugar, reduced-sodium soy sauce, sesame oil, ground ginger, crushed red pepper flakes, and pepper. Pour this sauce over the beef and vegetables and let it simmer for another minute or two.

Serving

  • Serve the stir fry over cooked white rice, garnished with sliced green onions and sesame seeds.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or on the stovetop.
