Ingredients
  

For the skillet

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced into ¼-inch rounds
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 16 ounces shelf-stable potato gnocchi
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (optional) depending on kielbasa saltiness
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Preparation

  • In a large skillet over medium heat, add the olive oil and sliced kielbasa. Cook until browned on both sides (about 4–5 minutes). Remove the kielbasa and set it aside.
  • In the same skillet, sauté the onion until translucent (about 3 minutes). Add the garlic, bell pepper, and zucchini; cook for 4–5 minutes until the vegetables have softened.
  • Stir in the gnocchi and let it cook for 2–3 minutes to get a slight golden sear.
  • Pour in the chicken broth and heavy cream. Season with paprika, black pepper, and salt (if needed). Stir to combine.
  • Return the kielbasa to the skillet. Reduce the heat to low, cover, and simmer for 5–6 minutes until the gnocchi is soft and the sauce has slightly thickened.
  • Sprinkle the shredded cheese over the top, cover again, and let it sit for 1–2 minutes to melt the cheese.
  • Garnish the Kielbasa Gnocchi Skillet with fresh parsley and serve hot, ready to delight your taste buds.

Notes

Make sure to cut the kielbasa into even slices for consistent cooking. Feel free to add your favorite vegetables, like spinach or cherry tomatoes, for extra nutrition. If you want a bit of spice, consider adding crushed red pepper flakes to the dish. Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of chicken broth or cream to loosen the sauce.
