Ingredients

Cookie dough

  • ½ cup unsalted butter, softened to room temperature one stick
  • 1 large egg
  • ¾ cup sugar
  • ¼ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 2-3 teaspoons key lime zest Use fresh for best flavor.
  • 1 ¾ cups all-purpose flour (219g)
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Lime glaze

  • 1 cup powdered sugar
  • 1 tablespoon key lime juice
  • 1–2 tablespoon milk start with 1 tablespoon; add only enough for a thick icing
  • ¼ teaspoon vanilla
  • pinch salt optional
  • ½ teaspoon key lime zest

Instructions

  • Heat oven to 350°F and prepare two lined trays. Whisk flour, baking soda, and dough salt in a bowl.
  • Cream butter with the granulated and brown sugars. Beat in the egg and dough vanilla, then mix in dry ingredients and the 2–3 teaspoons of dough zest just until combined.
  • Divide dough into 24 portions of roughly 1 1/2 tablespoons each. Roll gently and space 12 per tray; bake trays separately for 9–11 minutes apiece until set.
  • Let each tray stand about 5 minutes, then move cookies to racks. Allow at least about 30 minutes to become fully cool before icing.
  • Combine powdered sugar, lime juice, glaze vanilla, glaze zest, optional salt, and initially 1 tablespoon milk. Add a little more milk only as needed, within the range. Stand briefly, coat the cooled cookies, and allow about 15 minutes for icing to settle.

Notes

Dough and glaze ingredients are separate groups. Start glaze milk at 1 tablespoon and adjust gradually. Cook time counts two trays; cooling and icing-setting time are included. A warm dough may need an additional brief chill.
