  • 2 cups diced avocados (about 2 large avocados) Choose ripe avocados for the best flavor and texture.
  • 2 cups sliced English cucumber (about 1 medium cucumber) Cut just before serving to maintain freshness.
  • 2.5 cups diced Roma tomatoes (about 3 medium tomatoes)
  • 0.25 cup sliced red onion
  • 0.5 cup small mozzarella cheese pearls Can substitute with feta cheese or vegan alternative.

Dressing Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Italian Seasoning
  • Salt (to taste)
  • Ground black pepper (to taste)

Instructions
 

Preparation

  • In a large bowl, add diced avocados, sliced cucumber, diced tomatoes, sliced red onion, and mozzarella cheese pearls. Gently toss to combine.
  • In a small bowl, whisk together olive oil, lemon juice, and Italian seasoning.
  • Pour the dressing over the vegetables and toss to coat well.
  • Add salt and ground black pepper to taste, and then serve.

Notes

This salad can be served as a side dish or as a light main course. Best enjoyed fresh. If storing leftovers, keep in an airtight container in the refrigerator for up to one day.
