  • 2 pounds frozen boneless skinless chicken breasts
  • 1 cup chicken broth (or water) Vegetable broth can be used for a vegetarian flavor.
  • ½ teaspoon salt Adjust to taste.
  • ¼ teaspoon ground black pepper Adjust to taste.

Preparation

  • Add 2 pounds of frozen boneless skinless chicken breasts to the bottom of the Instant Pot in as even a layer as possible.
  • Pour in 1 cup of chicken broth, then sprinkle ½ teaspoon of salt and ¼ teaspoon of ground black pepper evenly over the chicken.
  • Close the lid securely and seal the venting valve.
  • Set the cook time on 'manual' to 12 minutes, adjusting a minute or two depending on the thickness of the chicken.

Cooking

  • Once the cook time is up, let the Instant Pot naturally release for 10-15 minutes. After that, manually release any remaining steam.
  • Let the chicken rest for a few minutes before chopping, shredding, or serving.

Serving Suggestions

  • Shred the chicken for tacos, slice it for salads, or add it to rice and vegetables for a full meal. Experiment with different sauces and dressings.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to three months. Always label containers with the date. For added flavor, try garlic powder, onion powder, or herbs.
