Main Ingredients
- 1 lb fully cooked kielbasa
- 2 medium potatoes, chopped
- 2 cups broccoli, chopped
- 2 medium carrots, sliced
Honey Garlic Sauce
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
Method
Heat the oven to 400°F (200°C). Slice the fully cooked kielbasa into bite-size pieces, cut the potatoes into small, even chunks, slice the carrots, and divide the broccoli into florets.
Whisk the honey, minced garlic, olive oil, salt, and pepper until evenly combined.
Toss the kielbasa and vegetables with the glaze, then spread in a shallow layer on a large rimmed baking sheet. Spread out the broccoli and avoid pools of glaze on bare areas of the pan.
Roast for 25–30 minutes, stirring halfway, until the potatoes and carrots are fork-tender and the kielbasa is hot throughout according to its package directions. If the roots need longer, lift off any finished broccoli or sausage and continue roasting the firm pieces.
Divide the sausage and vegetables into 4 portions and spoon any glaze from the pan over them.
- Refrigerate within 2 hours and use within 3–4 days.
- Reheat leftovers to 165°F.
