For the Stir Fry
- 2 tablespoons cooking oil divided
- 2 cups broccoli
- 1 pound boneless, skinless chicken breasts cut into 1 inch pieces
- 4 cloves garlic minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup water
- 1/4 cup honey
- 1 teaspoon sesame oil
- 2 teaspoons cornstarch
- Salt and pepper to taste
- sesame seeds for garnish
Instructions
Mix soy sauce, honey, sesame oil, and 3 tablespoons of the measured water. Separately, stir cornstarch with the remaining 1 tablespoon cold water until smooth.
Heat 1 tablespoon cooking oil in a large skillet over medium-high heat. Sauté broccoli for about 4–5 minutes until tender-crisp and lightly browned, then transfer to a plate.
Add the remaining 1 tablespoon oil and cook the 1-inch chicken pieces in two batches, turning until browned and 165°F in the thickest pieces. Transfer each finished batch to a plate.
Lower the heat to medium and add the garlic with the honey-soy mixture. Simmer for about 1 minute until fragrant, stir in the remixed slurry, and cook for 1–2 minutes until glossy.
Remove the skillet from the heat and fold in the chicken, its juices, and broccoli until coated. Adjust salt and pepper and garnish with sesame seeds if desired.
- Refrigerate in shallow containers within 2 hours; use within 3–4 days.
- Reheat to 165°F, adding a splash of water to loosen the thickened sauce.
