Ingredients
  

Marinade

  • ½ cup honey
  • ¼ cup soy sauce
  • 3 cloves garlic (minced)
  • 1 small lemon Juice of one small lemon

Main Ingredients

  • 1 pound large scallops
  • 2 tablespoons butter
  • Green onions (for garnish)

Preparation

  • In a small bowl, whisk together the honey, soy sauce, minced garlic, and lemon juice.
  • Add half of the sauce to the scallops and let them marinate for 30 minutes.

Cooking

  • In a medium-sized skillet, melt the butter over medium heat.
  • Remove the scallops from the marinade and set the marinade aside. Season the scallops with salt and pepper.
  • Sear the scallops in the skillet for about 3 to 3½ minutes on each side until they are golden brown.
  • Pour the reserved marinade into the skillet. Cook until the sauce starts to thicken, then add the scallops back into the pan to coat them in the sauce.
  • Garnish with green onions before serving.

Notes

Make sure your scallops are dry before searing them for a better crust. Don’t overcrowd the skillet; cook scallops in batches if necessary to ensure they sear properly. Experiment with adding ginger or chili flakes to the marinade for an extra kick. If you have leftovers, store the cooked scallops in an airtight container in the refrigerator. They will last up to two days.
