Main Ingredients
- 4 pieces ripe peaches, pitted and chopped
- 1 cup fresh lemon juice
- 3/4 cup sugar (adjust to taste)
- 4 cups water
Wash four peaches, remove pits, and chop the flesh. Put fruit, measured fresh lemon juice, and sugar in a blender; blend until smooth.
Set a fine-mesh strainer over a pitcher and strain the mixture, pressing gently to collect the juice while leaving coarse solids behind.
Stir in four cups cold water. Taste and adjust sweetness if desired, making sure any added sugar dissolves.
Pour into four generous servings over ice. Refrigerate the covered pitcher and stir before later pours.
Refrigerate in a covered pitcher and use within three days.
Stir before serving; this is not a shelf-stable canning recipe.
