Pasta Ingredients

  • 2 cups all-purpose flour Ensure the surface you work on is clean.
  • 3 large eggs
  • 1 tablespoon olive oil
  • ¾ teaspoon salt
  • 1 tablespoon water Adjust the amount if the dough seems too dry.

Preparation

  • On a clean surface, place the flour in a mound and use your hands to form a nest in the center.
  • Add the eggs, olive oil, salt, and water to the center of the nest.
  • Use a fork to gently break the yolks of the eggs. Slowly stir the center of the nest, incorporating a little of the flour walls at a time until a dough forms.
  • Use your hands to finish mixing all the flour in until a dough is formed.
  • Knead the dough for about 8-10 minutes until it comes together into a smooth dough.
  • Wrap the smooth dough in plastic wrap and chill it in the fridge for an hour.
  • Cut the dough into four pieces. Shape the first section into a small flat oval and keep the remaining pieces wrapped until you are ready to use them.

Rolling and Cutting

  • Feed the oval piece of dough through the pasta maker on the number 1 setting.
  • Fold the pasta into book folds. Run it through the pasta maker on setting 1 two to three more times before moving to the next settings until the pasta reaches the desired thickness.
  • Dust with flour if the dough gets sticky or becomes too long to handle.
  • Use the pasta maker cutting attachment to cut the noodles into your preferred shape.
  • Dust the final noodles with flour and hang them on a pasta rack or make them into nests. Let them rest for about 30 minutes on a floured surface.

Cooking

  • Bring a large pot of salted water to a boil.
  • Boil the pasta for 60-90 seconds. Toss it with your favorite sauce and enjoy!

Notes

Store homemade pasta in an airtight container in the fridge for a couple of days or freeze uncooked noodles with parchment paper to prevent sticking.
