  • 8 oz penne pasta
  • 1 lb cooked chicken, shredded
  • 1 packet ranch seasoning mix
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup chicken broth
  • 1/2 cup cooked bacon, crumbled
  • to taste salt and pepper
  • to taste chopped green onions for garnish

Cooking

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet over medium heat, combine the shredded chicken, ranch seasoning, cream cheese, chicken broth, and half of the cheddar cheese.
  • Stir until well combined and the cream cheese is melted.
  • Add the cooked penne and mix until everything is coated.
  • Stir in the crumbled bacon and season with salt and pepper to taste.
  • Sprinkle the remaining cheddar cheese on top and let it melt.
  • Serve warm, garnished with chopped green onions.

Notes

For extra flavor, consider adding sautéed vegetables like bell peppers or spinach. Use rotisserie chicken to save time. Add red pepper flakes or jalapeños for a spicy kick. Leftovers can be stored in the refrigerator for up to three days or frozen for up to three months.
