Hobo Casserole

Ingredients
  

Meat and Aromatics

  • 2 pounds ground beef
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup diced onion (about ½ a large onion)
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper

Potato Layer

  • 2 pounds russet potatoes

Sauces and Cheese

  • 1 can (12-ounce) evaporated milk
  • 1 can (10.5-ounce) cream of mushroom soup
  • 1 can (10.5-ounce) cream of chicken soup
  • 3 cups shredded cheddar cheese (divided)
  • 1 cup fried onions

Instructions
 

Preparation

  • Preheat the oven to 350 degrees Fahrenheit and spray a 9 x 13 x 2-inch baking dish with pan spray.
  • In a large skillet, cook the ground beef over medium-high heat until browned, breaking it into pieces as it cooks. Stir in the salt and pepper.
  • Add the diced onion and bell peppers to the skillet and cook until the onion is translucent and soft. Drain off any excess fat and turn off the heat.
  • While the beef mixture cooks, peel and slice the potatoes thinly, then place them into a large bowl of cold water.
  • In a medium bowl, whisk together the evaporated milk, cream of mushroom soup, and cream of chicken soup.
  • Drain the potatoes and pat them dry with clean paper towels.

Layering and Baking

  • Layer half of the sliced potatoes in the bottom of the prepared baking dish.
  • Layer half of the meat mixture over the potatoes. Follow with half of the soup mixture, then sprinkle on 1 ½ cups of shredded cheese.
  • Repeat the layers with the remaining potatoes, meat, soup, and another 1 ½ cups of cheese.
  • Top the casserole with the fried onions and cover it tightly with aluminum foil.
  • Bake in the preheated oven for 75-80 minutes until potatoes are tender and internal temperature reaches 165 degrees Fahrenheit.
  • Remove the foil and broil under high for 1-2 minutes until the top is golden brown.
  • Let the casserole sit for about 10 minutes before serving.

Notes

Hobo Casserole is best served warm right out of the oven. Pair with a simple side salad or steamed vegetables for a balanced meal. Can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 3 months.
