  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup almond milk Can substitute with any milk.
  • 1/4 cup honey or maple syrup For vegan option, use maple syrup.
  • 1 cup blueberries Fresh or frozen.
  • 1 ripe banana, mashed Use ripe bananas for sweetness.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, combine the rolled oats, protein powder, baking powder, baking soda, and salt.
  • In another bowl, mix together the almond milk, honey (or maple syrup), mashed banana, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the blueberries.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let them cool for a few minutes before transferring to a wire rack.

Notes

Enjoy warm or at room temperature. Spread nut butter on top for extra flavor and protein. Pair with a cup of tea or coffee for a cozy breakfast.
