  • 1 ¼ cups all-purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon espresso powder
  • ¼ cup butter melted
  • ¾ cup coconut sugar
  • ½ cup applesauce
  • ½ cup Greek yogurt
  • 2 pieces eggs
  • ½ cup whole milk
  • 1 teaspoon vanilla
  • ¼ cup mini chocolate chips optional

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Line two 6-inch round cake pans with parchment paper and grease them well. Set aside.
  • In a medium bowl, combine the flour, cocoa powder, baking soda, baking powder, salt, and espresso powder. Set aside.

Mixing

  • In a large bowl, whisk together the melted butter, coconut sugar, eggs, applesauce, Greek yogurt, whole milk, and vanilla until smooth.
  • Add the dry ingredients to the wet ingredients and stir until combined.
  • If using, add mini chocolate chips and stir until evenly distributed.

Baking

  • Divide the batter evenly between the two prepared cake pans.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean or with a few crumbs.
  • Place the cake pans on a wire cooling rack to cool to room temperature (about 1 hour).

Serving

  • Once cool, lift the cakes out of the pans, remove the parchment paper, and let them cool completely on the wire rack.
  • Once cool, frost with chocolate frosting and serve.

Notes

For extra flavor, try adding a pinch of cinnamon to the batter. This cake can be served with a scoop of vanilla ice cream or topped with fresh berries for an added touch. Leftover cake can be stored in an airtight container at room temperature for 2-3 days or refrigerated for up to a week.
