Ingredients
  

For the Meatballs

  • 1 lb ground beef or ground turkey
  • 1/2 cup panko bread crumbs
  • 1/4 cup onion, diced
  • 1 whole egg
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp ground ginger
  • 1/2 cup chicken broth or water

For the Sauce

  • 20 oz canned pineapple chunks (keep the juice!)
  • 2 tbsp soy sauce
  • 3/4 cup brown sugar
  • 1/2 cup vinegar
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 1 tbsp olive oil
  • 2 cups sweet peppers, cut in chunks (red, orange, yellow – any combination)

For Serving

  • Green onion, for garnish
  • Rice for serving

Instructions
 

Making the Meatballs

  • In a large bowl, mix the ground beef or turkey, panko bread crumbs, diced onion, egg, garlic powder, salt, and ground ginger.
  • Form this mixture into small meatballs, about 1-inch each.

Cooking the Meatballs

  • In a large skillet, heat the olive oil over medium heat.
  • Add the meatballs to the skillet and cook until browned on all sides.

Preparing the Sauce

  • While the meatballs are cooking, mix the canned pineapple juice, soy sauce, brown sugar, vinegar, and ginger in a saucepan.
  • In a small bowl, mix the cornstarch and cold water.
  • Stir this into the sauce and cook over medium heat until it thickens.

Combining the Ingredients

  • Once the meatballs are browned, add the pineapple chunks and sweet peppers to the skillet.
  • Pour the sauce over everything and simmer for about 10 minutes.

Serving the Dish

  • Remove from heat and garnish with chopped green onions.
  • Serve over rice.

Notes

Store any leftover Hawaiian Meatballs in an airtight container in the fridge for about three to four days. To reheat, warm them in the microwave or on the stovetop until heated through.
