  • 8 pieces 8 8-inch flour tortillas Can substitute with whole wheat or corn tortillas.
  • 1 cup guacamole (homemade or store-bought) Homemade guacamole offers a fresher taste.
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded cheddar cheese Can be substituted with Monterey Jack or pepper jack.
  • 1/2 cup corn kernels (frozen, canned, or roasted)

Preparation

  • Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper to prevent sticking.
  • Take one tortilla and spread a layer of guacamole on top.
  • Add cherry tomatoes, shredded cheese, and corn.
  • Place another tortilla on top of the filling.
  • Repeat this process with the remaining tortillas to create 4 quesadillas in total.
  • Place the assembled quesadillas onto the prepared baking sheet.

Cooking

  • Bake in the oven for about 8-10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and serve immediately.

Notes

Serve these quesadillas warm, cut into wedges. Offer salsa, sour cream, or extra guacamole on the side for dipping. Store leftovers in the refrigerator for up to 3 days, reheating at 350 degrees F for about 10 minutes.
