  • 3 pieces avocados Use ripe avocados for best flavor and texture.
  • 2 small Roma tomatoes Roast for enhanced flavor.
  • 1 piece jalapeño Adjust for desired spice level.
  • 1/4 piece red onion Chop finely.
  • 1/4 tsp garlic Chop finely or adjust as desired.
  • 1 TBS lime juice Adjust to taste.
  • 1-2 tsp veganaise Adjust for creaminess.

Preparation

  • Start by roasting the tomatoes and jalapeño on a skillet until charred. Set aside to cool.
  • Finely chop the onion, tomatoes, jalapeño, and garlic. For chunkier guacamole, cut into larger pieces.

Mixing

  • In a bowl, mash the avocados with 1 tsp of veganaise until smooth or to your preferred creaminess.
  • Add the chopped tomatoes, onions, garlic, and half of the jalapeño to the avocado mixture.
  • Mix everything together and season with salt to taste. Adjust jalapeño and veganaise as desired.

Notes

Serve with fresh tortilla chips or use in tacos and sandwiches. Store in an airtight container to minimize browning.
