  • 1 pound peeled and deveined raw jumbo shrimp Use jumbo shrimp for best results.
  • 1 red bell pepper red bell pepper (cut into chunks)
  • 1 green bell pepper green bell pepper (cut into chunks)
  • 1 orange bell pepper orange bell pepper (cut into chunks)
  • 1 red onion red onion (cut into bite-sized chunks)
  • to taste Salt
  • to taste Pepper
  • ½ teaspoon smoked paprika

For the Lemon Garlic Butter

  • 3 tablespoons melted butter
  • 2 tablespoons finely minced garlic
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley For garnish

For the Grill

  • to taste Olive oil For greasing the grill

Preparation

  • Preheat the grill to medium high heat. Clean the grill with a brush and grease the grates generously with olive oil to prevent sticking.
  • Thread the shrimp, red bell pepper, green bell pepper, orange bell pepper, and red onion onto skewers.
  • Season the shrimp and vegetables with salt, pepper, and smoked paprika.

Making the Lemon Garlic Butter

  • In a separate bowl, mix melted butter, minced garlic, and lemon juice to create the lemon garlic butter.
  • Brush the lemon garlic butter onto the skewers before grilling.

Cooking

  • Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  • Once done, remove from the grill and sprinkle with fresh parsley.

Notes

Serve immediately. Pairs well with rice, quinoa, or a fresh salad. Drizzle with remaining lemon garlic butter for added flavor.
