Ingredients
  

For the garlic butter mixture

  • 1/2 cup unsalted butter Melted
  • 1 medium shallot (minced)
  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper flakes Or more, to taste
  • Kosher salt and freshly ground black pepper To taste

For the shrimp and garnish

  • 1 1/2 pounds medium shrimp (peeled and deveined)
  • 2 lemons (halved) For grilling and serving
  • 2 tablespoons chopped fresh parsley leaves For garnish

Instructions
 

Preparation

  • Melt the butter in a small skillet over medium heat.
  • Stir in the shallot, garlic, and red pepper flakes. Cook until fragrant, about 2 minutes. Season with salt and pepper to taste.
  • Thread the shrimp onto skewers and season with salt and pepper. Brush with 2 tablespoons of the butter mixture.
  • Preheat the grill to medium-high heat.

Cooking

  • Add the skewers to the grill and cook, turning occasionally, until the shrimp are pink and opaque, about 3-4 minutes.
  • During the last 2 minutes of cooking, place the lemons on the grill, cut side down.

Serving

  • Serve immediately, drizzled with the remaining butter mixture, and garnish with grilled lemons and parsley if desired.

Notes

For more flavor, marinate the shrimp in the garlic butter mixture for 30 minutes before grilling. Soak wooden skewers in water for 30 minutes before using to prevent burning on the grill. Be careful not to overcook the shrimp; they cook quickly.
