Pasta and Vegetables

  • 1 pound cooked pasta Use your choice of pasta, cooked al dente.
  • 1 pint halved cherry tomatoes
  • 2 cups arugula Fresh arugula for best flavor.
  • 1 cup shelled sugar snap peas
  • 1 bunch asparagus (trimmed and cut into 1-inch pieces) Trimmed for better texture.
  • ¼ cup thinly sliced green onions

Toppings

  • 1 cup toasted pine nuts Can be substituted with walnuts or almonds.
  • ½ cup grated parmesan cheese For flavor and creaminess.
  • 1 ½ cups green goddess dressing Homemade or store-bought.
  • Fresh basil (for garnish) For added flavor.

Instructions
 

Preparation

  • In a large bowl, add the cooked pasta, halved cherry tomatoes, arugula, shelled sugar snap peas, and trimmed asparagus.
  • Add the sliced green onions, toasted pine nuts, and grated parmesan cheese to the bowl.
  • Toss all the ingredients together to combine.
  • Top with the green goddess dressing and toss again until everything is evenly coated.
  • If desired, garnish with fresh basil before serving. Enjoy immediately!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will enhance overnight.
