Ingredients
  

Potato Puff Mixture

  • 2 cups mashed potatoes Leftover mashed potatoes work well.
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten

Coating

  • 1/2 cup breadcrumbs

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and grease a mini muffin tin with non-stick cooking spray.
  • In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, chives, salt, black pepper, garlic powder, and beaten eggs.
  • Mix the ingredients until well combined.

Assembly

  • Place the breadcrumbs in a separate shallow dish.
  • Using a spoon or a cookie scoop, form small balls of the potato mixture and roll them in the breadcrumbs to coat evenly.
  • Place each coated potato puff into the greased mini muffin tin.

Cooking

  • Bake in the preheated oven for 20-25 minutes or until the potato puffs are golden brown and crispy.
  • Remove from the oven and let them cool for a few minutes before carefully removing them from the muffin tin.

Notes

Best served warm. Can be enjoyed on their own or with dipping sauces like sour cream or ranch dressing. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in the oven.
