  • 2 pounds beef chuck roast, cut into 1.5-inch cubes
  • 1 tablespoon vegetable oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/2 cup beef broth
  • 1/4 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 1 teaspoon red pepper flakes (optional, for a kick)
  • 2 tablespoons cornstarch
  • 4 tablespoons cold water

Preparation

  • Pat beef cubes completely dry with paper towels. Season generously with salt and black pepper.
  • Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. In batches, sear beef cubes on all sides until deeply browned. Remove seared beef to a plate.

Cooking

  • Reduce heat to medium. Add chopped onion to the pot and cook, stirring occasionally, until softened, about 5-7 minutes.
  • Add minced garlic and grated ginger, cooking for another minute until fragrant.
  • Return the beef to the pot. Pour in the soy sauce, beef broth, brown sugar, rice vinegar, and red pepper flakes (if using). Stir well to combine.
  • Bring the mixture to a simmer, then reduce heat to low. Cover the pot tightly and let it braise gently for 2 to 3 hours, or until the beef is fork-tender.
  • Check occasionally to ensure there's enough liquid; add more broth if necessary.
  • Once tender, remove the lid. In a small bowl, whisk together cornstarch and cold water to create a slurry.
  • Slowly pour the slurry into the sauce in the pot, stirring constantly. Continue to simmer and stir for 2-3 minutes until the sauce thickens to a glossy glaze.

Serving

  • Serve Glazed Sticky Beef Bites immediately, spooning extra sauce over them. They are perfect with rice or noodles!

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Freeze for up to three months. Thaw overnight in the refrigerator and reheat on the stovetop. Adjust red pepper flakes to taste for spice preference.
