  • 2 pounds Yukon gold potatoes
  • 4 tablespoons cream cheese
  • 4 tablespoons unsalted butter
  • 4 tablespoons roasted garlic
  • 1 tablespoon minced basil
  • 1 tablespoon minced rosemary
  • 1 tablespoon minced thyme
  • 1 tablespoon minced chives
  • 2 teaspoons salt
  • to taste freshly ground pepper

Instructions
 

Preparation

  • Start by cleaning 2 pounds of Yukon gold potatoes. Cut them into 1-inch sized pieces.
  • Place the potatoes in a large pot and fill it with water to cover the potatoes.
  • Bring the water to a boil over high heat, then reduce to medium-high. Cook the potatoes until they are fork-tender, about 20 minutes.
  • Drain the potatoes in a colander and return them to the large pot.

Mixing

  • Add in 4 tablespoons of cream cheese, 4 tablespoons of unsalted butter, 4 tablespoons of roasted garlic, 1 tablespoon each of minced basil, rosemary, thyme, and chives, 2 teaspoons of salt, and freshly ground pepper.
  • Use a hand mixer or potato masher to mash the potatoes until smooth and creamy.

Serving

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove, adding a splash of milk or cream for creaminess. For variations, you can use different herbs or add a pinch of red pepper flakes.
