For the Beef Tenderloin

  • 4-5 pound beef tenderloin Trimmed and tied
  • 2 tablespoons olive oil For searing
  • Salt Salt To taste
  • Pepper Pepper To taste

For the Garlic Herb Butter

  • 1 cup softened butter At room temperature
  • 5 cloves garlic, minced
  • 1 tablespoon finely chopped thyme
  • 1 tablespoon finely chopped oregano
  • 1 tablespoon finely chopped rosemary
  • 1 teaspoon salt
  • ½ teaspoon pepper

Preparation

  • Prepare the beef tenderloin by trimming any excess fat, cutting it in half, and tying each roast to maintain an even thickness.
  • Preheat the oven to 425°F.

Searing the Beef

  • Heat a heavy-bottomed skillet over medium-high heat and add 2 tablespoons of olive oil.
  • Season the tenderloin with salt and pepper, then sear each side for 3-4 minutes until golden brown.
  • Reduce the heat to medium-low.

Making Garlic Herb Butter

  • In a bowl, mix together the softened butter, minced garlic, thyme, oregano, rosemary, salt, and pepper.

Baking

  • Spread half of the garlic butter mixture on the seared tenderloin and place it in a roasting pan.
  • Bake in the preheated oven for 20-25 minutes until the tenderloin reaches 140°F.

Finishing Touches

  • Remove from oven, brush the rest of the garlic butter on top, and let it stand for 10 minutes before slicing.

Notes

Make sure to let the beef rest before slicing to keep it juicy. Use a meat thermometer for accurate doneness.
