Ingredients
  

Cookie Crust

  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 ¼ cup flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Cream Cheese Frosting

  • 1 (8 ounces) package of cream cheese (softened)
  • 2/3 cup powdered sugar
  • 1 tablespoon instant vanilla pudding powder
  • 1 teaspoon vanilla extract

Toppings

  • Fresh fruits (variety of your choice) Strawberries, kiwi, blueberries, bananas, etc.

Instructions
 

Cookie Crust

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add in the large egg and vanilla, mixing well.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the butter mixture, stirring until combined.
  • Spread the cookie dough onto a pizza pan, shaping it into a round crust.
  • Bake for 10-12 minutes or until lightly golden. Let it cool completely.

Cream Cheese Frosting

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar, pudding powder, and vanilla extract. Mix until creamy and fluffy.
  • Spread the cream cheese mixture over the cooled cookie crust once it has completely cooled.

Topping

  • Arrange your choice of fresh fruits over the cream cheese layer.

Notes

Store leftover fruit pizza in the refrigerator covered with plastic wrap for best freshness. Best enjoyed within 1-2 days.
