Ingredients
  

For the shrimp

  • 24 ounces large raw shrimp, peeled and deveined Use fresh or thawed frozen shrimp
  • 2 large eggs
  • 1 cup buttermilk (or milk) Substitute regular milk if needed

For the coating

  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 ½ cups all-purpose flour
  • 1 cup cornmeal
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cayenne pepper Adjust for spice level preference

For the dipping sauce

  • 3/4 cup mayo
  • 1/2 cup sweet chili sauce

For frying

  • Canola oil For frying

Instructions
 

Preparation

  • Heat 1/2-inch of oil in a large, heavy-bottomed skillet over medium heat. Line a large plate with paper towel and set aside.
  • In a cake pan or pie plate, whisk together the eggs and buttermilk. Add 1/2 teaspoon of salt and pepper.
  • In another cake pan, mix together the flour, cornmeal, salt, pepper, garlic powder, onion powder, and cayenne pepper.
  • Add the shrimp to the egg mixture and coat well. A few at a time, add the shrimp to the flour mixture and coat completely. Place them on a clean plate while you bread the remaining shrimp.

Frying

  • Add the shrimp to the skillet, making sure not to overcrowd the pan. Fry for about 3 minutes until crispy and golden brown.
  • Drain on the prepared plate. Continue until all shrimp are fried.

Dipping Sauce

  • For dipping sauce, mix mayo and sweet chili sauce together.

Notes

Ensure the oil is hot enough before adding shrimp for a crispy texture. Don't overcrowd the skillet; cook in batches if necessary. Feel free to adjust the spices in the coating to suit your taste.
