Ingredients
  

For frying

  • Oil for frying Oil for frying Heat oil to about ½-inch deep in the pan.

Main Ingredients

  • 4 pieces firm green tomatoes Slice into ¼-inch thick slices.
  • 2 pieces eggs Whisk together with milk.
  • ¼ cup milk Use whole milk for best results.
  • 1 cup flour For dredging the tomatoes.
  • ½ teaspoon salt To season the flour.
  • ¼ teaspoon pepper For seasoning.
  • ½ cup cornmeal For the final coating.
  • ½ cup breadcrumbs For added crunch.
  • 2 tablespoons grated parmesan Adds a cheesy flavor.
  • 1 tablespoon Italian seasoning For extra flavor.

Instructions
 

Preparation

  • In a medium-size saucepan, add oil for frying until it is about ½-inch up the sides of the pan. Heat to medium-high heat.
  • Slice the 4 green tomatoes into ¼-inch thick slices.
  • In a small bowl, add 2 eggs and whisk them together. Then, add in ¼ cup milk.
  • In another small bowl, mix together 1 cup flour, ½ teaspoon salt, and ¼ teaspoon pepper.
  • In a separate small bowl, combine ½ cup cornmeal, ½ cup breadcrumbs, 2 tablespoons grated parmesan, and 1 tablespoon Italian seasoning.

Cooking

  • Dredge each tomato slice first in the flour, then coat it in the egg mixture, and finally coat it in the cornmeal mix.
  • Carefully add the breaded tomato slices to the pan of hot oil and cook for 2-3 minutes until they are crispy and golden brown.
  • Remove the fried tomatoes with a slotted spoon and let them cool on a paper towel.

Notes

Serve warm or at room temperature. A great appetizer or side dish, pairs well with ranch or spicy remoulade.
