  • 8-10 pieces beef short ribs Choose well-marbled ribs for tenderness.
  • 1 tablespoon olive oil For searing the ribs.
  • 5 large carrots, sliced Adds sweetness and color.
  • 1 cup beef broth For added flavor.
  • 3 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Italian seasoning

Preparation

  • Season the beef short ribs with salt and pepper.
  • Heat a large skillet over medium-high heat and add the olive oil.
  • Place the short ribs in the skillet and sear each side for 1-2 minutes until golden brown.
  • Remove the short ribs from the skillet and add them to the slow cooker. Layer the sliced carrots on top.

Cooking

  • In a small bowl, whisk together the beef broth, minced garlic, tomato paste, Worcestershire sauce, and Italian seasoning. Pour this mixture over the short ribs in the slow cooker.
  • Cook on low for 8-9 hours or on high for 4-5 hours until the meat is fork-tender.

Notes

For more depth of flavor, try adding fresh herbs like rosemary or thyme to the slow cooker. Be sure to sear the short ribs well; this helps develop a richer flavor in the final dish. If you want a thicker sauce, you can remove the meat after cooking and whisk in a bit of cornstarch mixed with water before returning the meat to the sauce. Let leftovers cool completely and refrigerate for up to 3 days, or freeze for up to 3 months.
