Ingredients
  

For the Steak

  • 1.5 pounds flat iron steak Can substitute with sirloin or skirt steak.
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 3 cloves garlic (minced)
  • 1 teaspoon Kosher salt To taste
  • 0.5 teaspoon freshly ground black pepper To taste
  • 1.5 tablespoons canola oil (divided)

For the Vegetables

  • 1 red bell pepper cut into strips
  • 1 yellow bell pepper cut into strips
  • 1 red onion cut into wedges

Preparation

  • Preheat the grill to medium-high heat.
  • In a small bowl, combine chili powder, cumin, paprika, minced garlic, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
  • Season the steak with the chili powder mixture.
  • Brush the steak with 1 tablespoon of canola oil.

Cooking

  • Add the steak to the grill and cook, flipping once, for about 4-5 minutes per side for medium-rare.
  • Let the steak rest for 5 minutes after cooking.
  • While the steak is resting, season the bell peppers and onion with the remaining 1.5 tablespoons of canola oil, salt, and pepper.
  • Add the bell peppers and onion to the grill and cook until charred and tender, about 6-8 minutes.
  • Thinly slice the steak against the grain and serve with the grilled bell peppers and onion.

Notes

For extra flavor, let the steak marinate in the spice mixture for an hour before grilling. You can use any type of steak, and add more vegetables like zucchini or mushrooms.
