  • 1 pack yellow rice (5 oz)
  • 2 tablespoons olive oil
  • ½ onion chopped
  • 1 clove garlic (minced, equal to 1 teaspoon)
  • 1 pack turkey smoked sausage (sliced)
  • 1 can tomato sauce (6 oz)
  • 1 lb raw shrimp (tails off)
  • teaspoons Creole seasoning

Cooking Directions

  • Cook the rice according to the packaging directions.
  • In a large skillet, sauté the onion, green pepper, and garlic in olive oil over medium heat for about 2 minutes.
  • Add the sliced turkey smoked sausage and cook for about 5 minutes.
  • Mix in the cooked rice and stir in the tomato sauce.
  • Add the Creole seasoning, salt, and pepper; cook for about 15-20 minutes until the mixture is firm.
  • Finally, add the shrimp and cook until they turn pink, which will take about 5 minutes.

Notes

Easy Jambalaya can be served garnished with chopped parsley or green onions. It pairs well with a simple salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
