Ingredients
  

Pasta

  • 1.5 cups dry elbow macaroni pasta

Meat

  • 1 pound ground beef Can substitute with ground turkey or chicken.

Vegetables

  • 1 can petite diced tomatoes, undrained (14.5 oz) Mash before adding to the pot.
  • 2 cans tomato soup (10.75 oz each)
  • 1 can corn, drained (15.25 oz)

Seasonings

  • 1 packet sloppy joes seasoning mix
  • 2 tablespoons ketchup
  • 1 teaspoon parsley

Dairy

  • 0.5 cups shredded cheddar cheese Can substitute with mozzarella or pepper jack.

Instructions
 

Preparation

  • Cook the elbow macaroni noodles according to the package directions. Drain and rinse with hot water. Set aside.
  • In a large pot, cook the ground beef for about 3-5 minutes or until it turns brown. Drain any grease.

Cooking

  • In a small bowl, mash the undrained diced tomatoes and add them to the ground beef.
  • Mix in the tomato soup, corn, sloppy joes seasoning, ketchup, and parsley.
  • Add the cooked elbow macaroni noodles to the pot. Mix in the shredded cheese and simmer for 2 minutes.

Serving

  • Serve hot with cornbread or garlic bread for a complete meal.

Notes

For a spicier kick, add red pepper flakes or diced jalapeƱos. You can also use extra veggies like bell peppers or zucchini to boost nutrition.
