Wet Ingredients

  • 1 cup mashed bananas (about 3 large bananas) Use ripe bananas for the best sweetness.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 5 tablespoons melted unsalted butter
  • ¼ cup packed brown sugar
  • ½ cup granulated sugar

Dry Ingredients

  • 1 ½ cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

Preparation

  • Preheat the oven to 375 degrees Fahrenheit. Line a 12-count muffin pan with muffin liners, then lightly spray the pan with nonstick cooking spray.
  • In a large bowl, add mashed bananas, egg, vanilla extract, melted butter, brown sugar, and granulated sugar. Whisk until well combined.
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon.
  • Add the flour mixture to the banana mixture and mix just until combined. Be careful not to overmix.
  • Scoop the batter into the prepared muffin pan, filling each well about ⅔ to ¾ full.

Baking

  • Bake for 17-19 minutes, or until a toothpick inserted into the center of the muffins comes out clean.

Notes

Store muffins in an airtight container at room temperature for a couple of days, or in the refrigerator for up to a week. For longer storage, freeze them wrapped individually.
