Salad Ingredients

  • 1/2 head green cabbage, shredded (about 4 – 5 cups)
  • 2 pieces carrots, julienned or shredded (about 1 1/2 cups)
  • 2 pieces apples, cored and cut into matchsticks (green or red)
  • 3/4 - 1 cup dried cranberries
  • 1/2 cup slivered almonds
  • 2 - 3 pieces green onions, sliced (about 1/2 cup)

Dressing Ingredients

  • 1/4 cup tahini (sub with 1/2 cup mayo or plain non-dairy yogurt)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon fresh cracked pepper
  • Pinch salt

Preparation

  • In a small bowl, combine the tahini, maple syrup, apple cider vinegar, and pepper. If needed, add 1-2 tablespoons of water to thin the mixture. Set aside to let the flavors mingle.
  • In a large bowl, add the shredded cabbage, apples, carrots, dried cranberries, sliced green onions, and slivered almonds.
  • Drizzle the dressing over the top and mix well to coat all the ingredients.
  • Add salt and pepper to taste.
  • You can serve it right away or let it chill in the refrigerator for about 30 minutes before serving.

Notes

This coleslaw can be made a day ahead and stored in the refrigerator, covered, until you are ready to enjoy it. For the best texture, it’s best to consume it within a day for maximum crunchiness. Choose a mix of sweet and tart apples for a more interesting flavor. Using freshly squeezed lemon juice can enhance the flavor of the dressing.
