Easter Bunny Sugar Cookie Cups

Ingredients
  

For the cookie cups

  • 1 box white or yellow cake mix (13.25 oz.)
  • 1/4 cup flour
  • 8 tablespoons unsalted butter, melted and cooled Ensure butter is cooled to avoid cooking the eggs.
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 1/4 cup sugar, for rolling

For the ganache and decoration

  • 1 cup white chocolate chips
  • 1/4 cup heavy cream Heat until warm, not boiling.
  • 58 pieces M&Ms Used for decoration, resembling bunny ears.

Instructions
 

Make the Cookie Cups

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the cake mix, flour, melted butter, egg, egg yolk, and vanilla extract until well combined.

Form the Cups

  • Roll the dough into small balls and roll them in sugar.
  • Place them in a greased muffin tin.
  • Press the centers down with your thumb or the back of a spoon to create cup shapes.

Bake

  • Bake the cookie cups for 10-12 minutes, or until they are lightly golden.
  • Remove them from the oven and let them cool in the pan for a few minutes before moving them to a wire rack to cool completely.

Make the Ganache

  • In a small saucepan, heat the heavy cream until it is warm but not boiling.
  • Remove from heat and add the white chocolate chips. Stir until smooth.

Fill the Cups

  • Once the cookie cups are cool, fill each cup with the white chocolate ganache.

Decorate

  • Place two M&Ms in the ganache to resemble bunny ears. Use different colors for a fun design.

Notes

Store in an airtight container at room temperature for up to three days. Refrigerate to keep longer but bring back to room temperature before serving.
