  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 15-ounce cans stewed tomatoes
  • 1 6-ounce can tomato paste
  • 1 tablespoon Italian seasoning
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoons granulated sugar (or more to taste)
  • ½ cup chicken broth or water

  • In a medium-sized saucepan over medium-high heat, add 2 tablespoons of olive oil and 1 small diced yellow onion. Cook for 3-5 minutes or until the onion is tender.
  • In a food processor or blender, combine 2 (15-ounce) cans of stewed tomatoes, 1 (6-ounce) can of tomato paste, 1 tablespoon of Italian seasoning, 3 cloves of minced garlic, 1 teaspoon of salt, ¼ teaspoon of black pepper, and 2 teaspoons of granulated sugar.
  • Pulse the mixture until smooth.
  • Add the blended tomato mixture to the onions in the saucepan. Then add ½ cup of chicken broth or water. Sauté for 10 minutes to let the flavors blend together.

Notes

For a spicier version, add red pepper flakes to the saucepan while cooking the onions. Adjust sweetness with sugar if the sauce is too acidic. Fresh herbs can enhance the flavor.
