Delightful Easter Cookies

Ingredients
Dry Ingredients
- 1.5 cups 1½ cups plus one tablespoon all-purpose flour, spooned and leveled
- 1 teaspoon 1 teaspoon baking powder
- 0.5 teaspoon ½ teaspoon baking soda
- 0.25 teaspoon ¼ teaspoon salt
Wet Ingredients
- 0.5 cups ½ cup unsalted butter, softened but still cool Make sure the butter is softened but still cool for best texture.
- 0.5 cups ½ cup granulated sugar
- 0.33 cups ⅓ cup brown sugar, lightly packed
- 1 large 1 large egg, cold
- 2 teaspoons 2 teaspoons pure vanilla extract
Mix-ins
- 0.75 cups ¾ cup Easter/spring M&M's You can substitute with other types of candy.
- 0.5 cups ½ cup white chocolate chips or chunks
- 0.25 cups ¼ cup pastel sprinkles Press the dough into sprinkles for a festive look.
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter and both sugars until the mixture is light and fluffy.
- Add the cold egg and vanilla extract to the butter mixture, mixing until combined.
- On a low speed, add the flour mixture and mix until just combined.
- Gently stir in the M&M's and white chocolate chips.
Baking
- Scoop the dough, press it into the pastel sprinkles, and place them on the baking sheets.
- Bake for 8-11 minutes until the edges are set.
- Cool the cookies on wire racks.
Notes
Store cookies in an airtight container at room temperature for 5-7 days; freeze extras in a freezer-safe bag with parchment paper between layers.
