  • 4 pieces boneless skinless chicken breasts
  • 2 teaspoons Homemade Italian Seasoning
  • 1/2 teaspoon onion powder
  • to taste Kosher salt and cracked black pepper
  • 2 cloves garlic (minced)
  • 1/2 cup sun dried tomatoes (drained and chopped)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 1 cup baby spinach (chopped)

Instructions
 

Preparation

  • Season the chicken breasts with Italian seasoning, onion powder, salt, and pepper on both sides.
  • Spray the inside of the crockpot with nonstick cooking spray and layer the seasoned chicken at the bottom.
  • In a mixing bowl, whisk together the chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, and Parmesan cheese.
  • Pour the sauce over the chicken in the crockpot.

Cooking

  • Cook on high for 3 hours or low for 5 hours.
  • Right before serving, add the chopped spinach to the crockpot and let it wilt with the lid on for a few minutes.
  • Season with additional salt and pepper if needed, and serve over cooked pasta.

Notes

For added flavor, marinate the chicken in the seasoning for a few hours or overnight before cooking. You can also adjust the recipe by adding more vegetables or spice.
